Many Birds with One Stone

Do you know the feeling you get, when you step into a place overflowing with spirit and uniqueness? A place that embodies the Danish culture of community and baked good?Step into one of these cozy nests, and I promise—you’ll feel a whole lot of Hygge.
The story begins in 2016, when three friends opened Fovl — a place they felt the Nordvest neighborhood was missing. They wanted somewhere lacked to gather from morning to night, combining quality, craftsmanship and community — so they created it. What started as a simple spot serving coffee, beer, light meals, and homemade baked good quickly evolved as they refined and expanded their vision.

During the COVID pandemic, their focus shifted towards baking, leading to the birth of Flere Fugle (“many birds” in Danish) in 2022. Located in Democratic Garage — a space that once housed a blacksmith and car repair shop — it now forms part of a community hub focused on strengthening democratic participation. And really, what better way to discuss democracy than over great coffee and good pastry?
Later that year, Flok joined the family as the production kitchen for Flere Fugle and as a space for working with fresh produce, catering and baking workshops. Located at the library up the street, it also serve as the library’s canteen and café, hosting a “Fællesspisning” — a Danish tradition of communal dining where families gather to share a meal while children play nearby.

Their latest addition to this menagerie arrived in 2023 through a collaboration with the art association (Kunstforeningen) in Gammel Strand, under the adorable name - Lille Fugl (“little bird”, in Danish). It’s a cozy café and bakery in the heart of the city — one of my favorite places to meet friends and a top recommendation for visitors.
It is also where I found the inspiration for my Drømmekage babka, the very first recipe to be featured in my blog.
A shared thread runs through all of these “nests”: a desire to bring people together and the belief that quality, balance and sustainability are key to success and good hospitality.
If you are a local and haven’t explored the Nordvest locations yet, now is the time. They may feel a bit off-center for visitors, but that’s exactly why their little sister, Lille Fugl, is such a gem. Either way, you are in for a warm and fuzzy treat.
